What I Ate Wednesday: Old Favorites

Yesterday marked my return to my usual, everyday wholesome eats after a few weeks of indulgence. I have no sweeping resolutions regarding my eating habits or choices in this new year; rather, I am just planning to eat the way I have been for the last year or so– vegan, low-gluten, full of fruits and veggies and as unprocessed as possible. My meals yesterday were all pretty typical “Ami” meals, and I was so happy to return to eating this way to ring in the New Year!

For breakfast, I broke into a sample-sized bag of Purely Elizabeth’s pumpkin fig granola, which is one of my favorites.

Along with the granola, I rustled up some almond butter and a banana. . .

and tossed it all together with some plain coconut milk kefir and pumpkin pie spice. The result was one fabulous granola bowl!

All morning I was dreaming of putting together another souper-salad bowl for lunch. When the time came, my soup of choice was Whole Food’s carrot ginger soup.  This soup is so simple but so tasty and perfect for adding a bunch of veggies to.

I poured some soup onto a large salad of greens, sprouts, daikon, grated carrots and cucumber like this. . .

and heated it up until it looked like this!  It’s truly amazing how the veggies wilt down so much!

I also had some raw crackers and raw tomato chips on the side, along with a wedge of Dr. Cow raw cashew cheese.  The soup was filling but I knew that feeling would only be temporary– I needed more sustenance!

Of course, I had fruit for dessert, but I failed to snap a pic this time around.  Oh well, just imagine a medley of berries, grapes, pineapple and mango.

For dinner, I whipped up a new batch of my favorite tofu scramble.  I loaded it with tofu, kale, zucchini, pepper, onion and tons of spices.

I served it with some roasted potatoes and rutabaga over a bed of quinoa/buckwheat/millet.  Of course, I also devoured some steamed green beans, broccoli and baby carrots.  I never get sick of steamed veggies (assuming there is also a lot of hot sauce in the picture!).

Dessert featured an enormous sliced Honeycrisp and half a bar of Dagoba 87% dark chocolate.  I am so pleased to still be able to find Honeycrisps in stores!

Well, I’m off to work this morning for the first time in nearly two weeks!  It kind of feels like the first day of school all over again!

  1. It feels SO good to get back to my regular eating routine after the holidays. My whole body just feel better. Happy New Year!

      Hi Alley! I’m glad you were inspired! Based on the ingredients (I think it was just carrot, ginger, salt, pepper, onion, and garlic) hopefully it won’t be too complicated but taste amazing! Happy New Year!
