What I Ate Wednesday: Almost Wordless

Happy Wednesday friends– we’ve made it halfway through our first full post-holiday week, which is a week that always seems to drag a bit for me. I’m running a tad late this morning (I got sucked into an episode of the Real Housewives of Atlanta!), so I thought I’d make this an (almost) wordless What I Ate Wednesday post– thanks as always to Jenn for hosting such a fabulous celebration!

Breakfast: 1/4 cup Paleonola granola with a tablespoon of almond butter, a sliced banana, coconut kefir and pumpkin pie spice

Lunch: Massaged kale salad with raw daikon, cucumber, pea shoots and grated carrots, raw zucchini sticks and raw onion rings, a few raw “cheesy” crackers, and a wedge of raw Dr. Cow cashew blue algae cheese; mixed fruit

Snack: Trader Joe’s raw trail mix pack

Dinner: tofu scramble with kale, onion, pepper, garlic and spices, brown and wild rice, roasted root veggies, steamed broccoli, brussels sprouts and baby carrots; Honeycrisp apple; 1/2 bar of Dagoba 87% dark chocolate

  1. Yum. Those crispy onion rings look and sound great! Whenever at BK I always was torn between their crispy double-fried french fries… and their amazingly good onion rings :)

    And I love the big plate of cooked veggies! I just had some cooked carrots topped with coconut oil. LOVE.

    Wow, those onion rings look delicious!! I love onion rings, and would definitely love to try a healthier version of them:) Your dinner also looks delicious; brussels sprouts are one of my favorite veggies.

    Love the look of that maple pancake granola + the zucchini crips & onion rings yum! my dinners always look like that too – piled high with delicious roasted veggies yum!
