What I Ate Wednesday: Staple City

Hey y’all– Happy What I Ate Wednesday! How’s your week going? Knock on wood, but it’s going by pretty fast for me, which is always a plus. I just realized that I have a week long vacation coming up in a week and a half, so I am counting down for sure! I heart winter break!

Anyway, my eats this week have been all sorts of boring. While my meals all tasted delicious, I pretty much chucked creativity out of the window and stuck to tried and true staple meals. I do have a goal for the rest of the week to mix things up a bit, especially with breakfast and lunch, but we’ll see how that goes. Because I wake up so early, I hate to have to think about breakfast, so I just rotate two standard breakfasts that are tried and true. If I don’t get around to new breakfast combos this or next week, it will be a big goal for me during my winter break when I have some more time! I’d love to cook up a pancake or something along those lines!

So here’s what I have to show you–like I said, it’s not too exciting but it certainly was tasty!


Breakfast: some Paleonola granola (grain and gluten-free, consisting of dried fruit and nuts), a sliced banana, coconut milk kefir, a spoon of peanut butter and pumpkin pie spice on top!

Lunch: TJ’s minestrone soup heated with greens, grated carrots, cucumber, daikon and sprouts until all the veggies are steamed.

Plus a side of raw onion strings, raw One Lucky Duck cheezy crackers, and raw Dr. Cow tree nut cheese.

Dinner: tofu scramble (with kale, zucchini, onions, garlic, peppers and many spices) with roasted butternut squash, parsnips and brussels sprouts over a mix of quinoa, buckwheat, millet and amaranth; steamed broccoli, white string beans, and baby carrots

and half of an (unpictured) 87% Dagoba bar. . . dark chocolate is my weakness.

You definitely have seen all these eats on the blog before, but what can I say, I am a creature of habit– especially when I like something!

What meal do you consider a staple that you find yourself eating all the time?

  1. Question about your comment regarding the apples: Are there seasons where you can’t find some produce in the store? I know personally you can get “almost” anything around here in regards to veggies and fruit, year round. Is it the same where you live, or is it more seasonal?

      Hi Alley! Mostly you can get any fruit or veggie during any season; however, some varieties of certain things may be hard to find if they are off-season. For example, there are a bunch of different kinds of apples in the grocery store year-round, but honeycrisps have been hard to find past the fall. This year though, honeycrisps have been in store much longer than they were last year!

    That breakfast looks so amazing i dont think i would be able to change it up if i were you! Odd question, but do you always eat off paper plates? The tree hugger hippie in me is worried….
    Enjoy your staycation, those can be as great as leaving town too!

      Hi! Thank you so much for the comment! Sometimes I need to be told it is ok to eat the same foods over and over if it is what you like! About the paper plates– I know it is such a terrible habit. Honestly (this is sad), the one thing my husband and I never bought when settling into our home was plates/utensils and so on. So, we used paper and never stopped! We have agreed that when we move in the next year that is going to be the one thing we invest in so we no longer live like college students in a dorm or something! I appreciate your concern though because your comment alone is going to get me to buy a few plates just to tide us over until we move!
