What I Ate Wednesday: Packed With Goodness

Mondays get old real quick, don’t they? Wednesdays, on the other hand, are always welcome, thanks to Jenn and her wonderful WIAW party! I love reading through WIAW posts to see what other folks are eating to fuel themselves, and peeping in on other people’s meals always serve as excellent inspiration to mix things up in my own diet!

Of course, Wednesdays are awesome for a whole bunch of reasons. The whole “getting over the hump” thing is obviously exciting. I also love Wednesdays because in school, homeroom is extended every week on Wednesday, which means I get a few extra minutes of prep time before my first class. While it’s actually not a significant difference (it’s pnly five or six minutes longer), that extra time makes all the difference! It’s the little things right? I also reserve Wednesdays as “mom” days, so I get to hang out with my favorite lady!

Breakfast yesterday was the same old, same old. I am working on finishing my bag of Kaia date and spices raw granola (I only have a serving left), so I can move on to new granola frontiers. I started my day with some of the Kaia buckwheat granola, coconut milk kefir (yay for probiotics!), a sliced banana, sprouted almond butter, cinnamon and unsweetened coconut. What a power bowl!

I am going to feature Saturday’s lunch for you here– the secret ingredient was this One Lucky Duck pumpkin seed “parmesan.”

I had my standard Mexican salad bowl, which included romaine, mixed baby greens, 1/2 an avocado, grated carrots, cucumber, daikon, pico de gallo, vegan parmesan, cracked black pepper and of course, the raw, vegan “parmesan.”  It really did taste a lot like the real thing, though it’s nutritional yeast-based!

Lunch dessert was some organic dried mango.

This mango bits were the tastiest dried mango I have ever had!  They were wonderfully sweet and sour, organic, and with no added ingredients.

Here’s dinner from last night.  I made a huge batch of tofu scramble on Sunday, full of all sorts of spices and veggies.

I am so sorry but I forgot to snap a pic of my meal!  Just imagine about a cup of the scramble over a brown and wild rice mix, alongside steamed broccoli, baby carrots, and brussel sprouts.

I did manage to catch my dinner dessert apple on film.  It’s a Lady Alice– my new favorite apple!  Sorry Honeycrisp.

Now you all deserve a bonus dessert since I fell through with the dinner pic!  This dessert was consumed on Saturday night after a pizza dinner.  I finally tried this Bonnievilles Power Cookie in Salty Peanut– I bought a few different varieties but had yet to try any of them!  I was drawn to these cookies because they are vegan, gluten-free and made of super clean ingredients.

The cookie was enormous and chock full of peanuts!

I heated it up for thirty seconds and topped it with TJ’s soy vanilla ice cream, vegan caramel corn, vegan brittle and dark chocolate almond bark.

The cookie was so delicious!  It tasted so decadent, it was hard to believe it was vegan, gluten-free and free of all refined junk.  I am officially a fan and can’t wait to try some of the other flavors I bought!

While all these eats weren’t consumed on the same day, all in all, they do make up a might incredible day of food in my opinion.  Boy, I love good food!

  1. Yum….What an awesome day of eats. I LOVE dried mango! I’m an apple addict and I’ve never had a Lady Alice….I’m going to be on the lookout next time I’m at the store.

      Hi Kim! Thank you so much for visiting! Dried mango is so incredible and it just may be my favorite dried fruit! Please search out the Lady Alices– I even looked up their history online and found they are a relatively new type of apple. They are really firm and have a perfect balance of sweet and tangy!

  2. That Pumpkin Seed Parmesan sounds so interesting. I was very surprised with my first time trying nutritional yeast how well it replicated the flavor of real cheese!

      Hi Alley! I agree– nutritional yeast is kind of a wonder ingredient! This pumpkin seed parm definitely gets its cheesy flavor from nutritional yeast and I thought it did an awesome job of giving my salad a cheesy boost!

    Hi – just found your blog and you’re definitely inspiring me to be more creative and eat better. I’m a vegetarian, wanna be vegan too and I’ve gotten in a slump where I eat whatever’s handy instead of cooking good foods – need more veggies!

    I noticed your blog post way back in January 2012 about trying enzymes and probiotics. I was wondering if you still take them or if they helped you at all?

      Hi Lori– thank you so much for citing me as inspiration! I really appreciate it! I was vegan for a full year and am now allowing just a tad bit of dairy in my life when I dine out. Still though, I have moments everyday where I want to recommit to veganism! Anyway, I am still taking probiotics and enzymes daily. I think they do help me a little, but honestly, my digestion is so crazy that enzymes and probiotics aren’t enough to calm it down. I do recommend them though and do think they are playing a role in helping my poor digestion. I hope that helps!

  4. That pumpkin seed Parmesan looks really interesting! Does it melt well???

      Hi Katie! Thank you so much for the comment! The pumpkin seed parm is actually crispy since it’s dehydrated. It kind of has the texture of a super thin cracker– it adds a lot of flavor and is really delicious!

    Your meals looks darn good, especially that mexican salad. Just curious, how come you didn’t add any beans to it? I love adding beans to my salads, especially taco salad.

    We LOVE dried mango here too. We love mango period, so yeah dried is totally yummy!!
