Not to state the obvious, but can you all believe June is over? I remember as a kid that June seemed to last forever, but seriously, it went by in the blink of an eye! I hope July takes it sweet old time passing by since it is one of my favorite months.
I have been doing a whole lot of nothing this past week. Other than exercising consistently, the only other consistent thing in my routine these days is watching endless tv. My husband has been super busy lately, but life for him should calm down now so we can do some fun summer things together. In fact, we have plans for a Pawtucket Red Sox game tonight, which is a perfect summertime activity in Rhode Island that doesn’t cost a lot of money to boot.
I always do this at the beginning of summer vacation– I need to spend a good two weeks recovering from the school year. My goal is to get my behind peeled of the couch starting today and actually do something productive. What that is, I am not exactly sure, but at the very least, I should get out of the house a bit more and visit friends and family!
Well, another What I Ate Wednesday is upon us, so that’s good news, right? Thanks as always to Jenn for hosting!
For lunch, I microwaved a sweet potato and topped it with some TJ’s black bean and corn salsa. I served the potato over some arugula to get in some greens.
On the side, I had more greens in the form of a single-serving pack of Brad’s kale chips.
The nacho flavor is pretty awesome!
I forgot to snap a photo of my lunch dessert, but it was just a bowl of mango and strawberries.
I made some pinto bean and veggie chili in my crockpot, so I had some of that for dinner, served over brown rice and accompanied by steamed baby carrots, broccoli and string beans. I think the crockpot is the best thing ever for summer cooking, as it doesn’t heat up the kitchen and requires hardly any attention all day.

as well as some dark chocolate!
I ate so many veggies yesterday, which is something that I swear makes me feel so much better. I think my body, for the most part, just operates better when I take in a lot of produce. I am a volume eater too, so I love how you can eat so many veggies and not really break the calorie bank!
